The Jacksonville Jumbo Shrimp (Triple A Affiliate of the Miami Marlins) is searching for an Assistant Director, Food & Beverage to oversee and manage the food and beverage operation for the entire stadium which includes 12 suites, seven picnic areas and an in-stadium lounge. This is a full-time position and the scheduled is based on event schedule and all pre-and post-event duties deemed necessary by Director of Food and Beverage. This role will require office hours and hands on management hours of events at the baseball grounds of Jacksonville. The ideal candidate will have good leadership skills, customer service and at least three years of related experience.
  • Setting and monitoring the food quality and handling standards and ensuring that all procedures are maintained to deliver pleasurable dining experiences.
  • Hiring, managing and training staff to deliver superior customer service and communicating with customers to create memorable dining, ballpark and best in fan experiences.
  • Maintaining equipment, monitoring inventory and budget to ensure the best use of inventory and allocation of expenses.
  • Responsible for managing the warehouse, ordering, receiving, and inventory of all accountable items while working with the management team to reduce food cost, monitor labor usage and increase profit margin.
  • Monitors and inspects all equipment and products for events to ensure quantity is accurate, quality standards are met, and inventory is sufficient for daily, weekly and monthly needs.
  • Maintaining the POS systems throughout the stadium, preparing nightly and monthly reports that outline revenue generation and department performance.
  • Developing strong relationships with area vendors.
  • Comply with all State and City Licensing Authorities.
  • Other duties as assigned.
  • Skilled at restaurant operations, food preparation, and inventory management methods that drive positive results and align with business goals.
  • At least three years of experience managing a food and beverage operations (high volume venue experience is a plus), to include management of a large staff.
  • Skilled at developing and creating dining experiences that drive customer satisfaction and loyalty.
  • The ideal candidate will have good leadership skills, customer service and at least three years of relevant experience.
  • Excellent organizational, planning, communication and inter-personal skills.
  • Ability to undertake and complete multiple tasks.
  • Excellent technical skills which include a food preparation and presentation, inventory, and cost control.
  • Excellent leadership, verbal, and written communication skills, with the ability to manage a large seasonal workforce.
  • Technologically savvy, familiar with POS and Microsoft Office programs
  • BA/BS Degree in Hospitality, Restaurant, Food Service Management, or related major is preferred.
